The newest additions to the realm of vinegars are the "crema" and the glaze . The glaze is supposed to mimic an aged crema so don't be fooled. Just because its thick doesn't mean its aged. Glazes are reduced commercial grade vinegars with added sugar and thickeners.

Pedro Ximenez sweet sherry grapes are grown on the sunny rolling flatlands of the Montilla region in Andalucia of southern Spain. This Vinegar Cream is produced using the traditional Italian methods for aging balsamic vinegar and only has a 3% acidity level. The Pedro Ximenez grapes are harvested at their peak of sweetness. They are then reduced with slow cooking partly caramelizing the grapes into a "must". From there it undergoes a slow 25-year ageing process until it arrives at the desired density and acidity. The result is a smooth cream rich in flavor and aroma with a distinct flavor. Delicious to dress salads, meats and vegetables, as well as to decorate desserts such as ice cream and fresh fruits. 3.4 oz (200 ml)
