White Truffle Sauce (Salsa Tartufata Bianca)

The Passeri family's artisan crafted truffle sauce is made in small batches in Assisi Italy.  The all natural  recipe combines fresh whittetruffles harvested from the northern , extra virgin olive oil , button mushrooms, lemon, capers, parsley and a touch of anchovies. As an appetizer mix 1 tablespoon or more with a package of cream cheese, some parmigiano cheese, black pepper and a dash of EVOO and spread over crackers or toasted bread. Traditionally Italians mix with some warmed heavy cream or additional olive oil to toss with hot pasta. Try it with eggs : mix a bit with egg salad, scrambled eggs or in an omelet.
