Almond Olive Oil Cookies

I’ve had this idea for an almond cookie recipe a few weeks now. Tired of the rain on a Friday afternoon before my Saturday AM market, I finally took action and they came out delicious. Crispy, rich almond flavor and perfect with a cup of coffee or espresso. Click on the picture for a close up of these goodies.

Makes about 40 cookies

Preheat the oven to 350

  • 1 1/2 cups white whole wheat flour

  • 1 1/2 cups toasted whole almonds

  • 1 cup sugar

  • 3/4 Kolympari EVOO

  • 1 egg

  • 1 teas honey

  • 2 teas milk

  • 1 teas almond extract

  • 1 teas vanilla extract

  • 1/2 teas baking soda

  • 1/4 teas salt

Ground the almonds in a food processor until fine. A few tiny pieces are ok.

With the pad attachment of a standing mixer , blend together all of the dry ingredients. Add in the egg and olive oil. Then the honey, milk and extracts. It should form a ball.

Roll into 1″ balls and then roll in additional sugar. Place 1″ apart on a parchment lined cookie sheet. Bake for 12 minutes, remove to a wire rack and cool.
