Summertime Fruit & Nut Salad
Salads reach new heights during the summertime with the addition of fresh seasonal fruits. Try this refreshing fruit and nut salad as is or with a side of protein. For the dressing we recommend our award winning Bonamini EVOO or be daring and experiment with a citrus flavored EVOO. (We have them all click here) A nice slab of the Whole Wheat Bread recipe is fabulous with this salad !
Ingredients
Salad
- 4 cups salad greens, add some romaine for crunch, and arugula or endive if you like 
- 1 cup fresh raspberries 
- 1 cup fresh blackberries 
- 1 cup cherry tomatoes, halved 
- fresh mint and flat leaf parsley, roughly chopped, about 1/4 cup total 
- 2 peaches, thinly sliced 
- 1 avocado, diced or sliced 
- 1 cup goat cheese, feta or blue cheese crumbled 
- 1/2 cup toasted hazelnuts, walnuts or pecans 
- 2 scallions chopped 
Vinaigrette
- 1/4 cup Bonamini Extra Virgin Olive Oil or a citrus olive oil 
- 2 tablespoons of our 12 year aged balsamic vinegar or try one of these light refreshing flavored balsamics : peach , lemon , lime or orange balsamic 
- salt and pepper 
Instructions :
Gently toss the all the salad ingredients together. Leaving 2 tablespoons of cheese on the side.
Whisk the dressing ingredients together and gently toss the salad to coat. Sprinkle with remaining cheese and serve.
