Watermelon Salsa

This is one of the most refreshing salsas you will ever eat. Serve with chips for a snack or grilled chicken, fish or shrimp for a main.

Ingredients

  • * optional * 1 personal sized or mini watermelon, (to be used as the bowl) Cut in half and scoop out the watermelon

  • 2 cups diced watermelon

  • 1 cup diced cucumbers

  • 1 cup diced bell peppers, (any combination of green, orange, yellow or red peppers)

  • 1/4 cup diced red onion or scallions- try shallots for a more mild onion flavor

  • 1/3 cup chopped cilantro (or parsley if you don’t like cilantro)

  • 1 tablespoon lime or lemon balsamic

  • 1 tablespoon lime or lemon juice

  • 1 tablespoon lime or lemon EVOO

  • *optional* 1 teaspoon jalapeno EVOO or 1 tablespoon fresh chopped jalapenos

  • 1/4 tsp salt

  • 1/8 tsp black pepper

Directions :

Toss together the watermelon, cucumber, onions, and bell peppers in a large bowl with the chopped herbs. Mix the dressing ingredients in a separate bowl and then pour over the salsa tossing until coated. If you are using the watermelon bowl as a presentation fill the bowl with the salsa cover and refrigerate at least 1 hour before serving. Otherwise cover and chill until ready to serve.
